GERMAN PANCAKES

Why are German Pancakes "German??" My husband asked me this question tonight as we ate our lovely German Pancake dinner. We decided to Google it but couldn't find a good definition. Any ideas?? Well, they are YUMMY anyways.

3 eggs
1/2 cup milk
1/2 cup flour
1/4 teaspoon salt
2 1/2 tablespoons butter

Melt the butter in the bottom of a 9 inch circle/square pan. Mix eggs, milk, flour, and salt then add to buttered pan. Bake at 450 for 15 minutes. If done correctly it should puff up like a souffle. Let cool for a minute then dust with powdered sugar. We also put pancake syrup on ours. Yummmmmmm!!

LIGHTEST HOT ROLLS

The actual name of this roll recipe is under intense scrutiny. I guess it depends on where you live. They are called "Schovaers rolls" in Kansas and "Nilsen rolls" in Utah. Location, location, location!! =)

1 stick butter, softened
1/2 cup sugar
3 eggs
1 cup warm water
2 tablespoons yeast dissolved in 1/4 cup water
4 1/2 cups flour
2 teaspoons salt

Cream butter and sugar. Then add 3 beaten eggs, water, and yeast mixture. Finally, add flour and salt. Knead for 10 minutes. Cover and let rise for 1 hour.

Punch down. Turn out onto lightly floured surface and divide into 2 equal portions. Roll one dough half into a 12-inch circle. Cut circle into 12 wedges with a pizza cutter. Roll up each wedge starting at wide end. Place point-side down on greased baking sheet. Repeat with remaining dough. Rolls may be frozen at this point (*see note.) Let rolls rise until almost doubled or about 1 hour.
Bake for 12-15 minutes at 400 degrees. Makes 2 dozen.

*Note: Place baking sheet in freezer for about an hour. Remove and place rolls in freezer bag. When it's time to bake them place on greased baking sheet 4-5 hours before serving. Cover with plastic wrap and let rise. Bake as usual.

MACARONI AND CHEESE

I made this all the time when I was raising my family. It's not a very unique recipe, but it's how I make it.

Cook 1 box of macaroni in boiling water for 10 minutes. Drain. Meanwhile melt 1/4 cup butter in a saucepan. Remove from heat and add 1/4 cup flour. Add 2 cups milk, 1 teaspoon salt and some pepper. Cook and stir until thick. Pour over macaroni. Add 2 cups grated cheddar cheese and mix. Add 1 cup cubed ham if you like. You can serve this immediately (which is what I usually did) or pour it into a casserole dish and bake for 30 minutes at 350 degrees.

HOT FUDGE SAUCE

Gramma K made this super rich fudge sauce while we were in SLC for Thanksgiving. We had it on ice cream but I bet it would be good on just about any kind of dessert. =)

Beth's Hot Fudge Sauce

2 cups sugar
3/4 cups cocoa
1/4 cup flour
1/4 teaspoon salt
2 cups half and half
4 Tablespoons butter or margarine
1-2 teaspoons vanilla

Combine dry ingredients in saucepan, mix well. Gradually add half and half (or milk), whisking til smooth. Add butter. Boil and simmer 8 minutes, stirring constantly. Cool and add vanilla.

APPLESAUCE WHOLE WHEAT BREAD

J, I'm sorry it took me so long to post this. I think you only asked for it a week ago. Your bread making urge is probably gone by now. I hope this is the bread recipe you meant. You can use up some of that homemade applesauce I brought you. Or not. Just think-now that this recipe is posted on We Recipe you can't lose it . None of us can. Unless the internet becomes obsolete. Or crashes. Or we don't have access to a computer. Then you can just call me.

3 cups applesauce
2 1/2 cups hot water
1 cup brown sugar
2 tablespoons salt
1/2 cup oil
6 cups whole wheat flour
2 tablespoons yeast
1/2 cup warm water
6 cups white flour

Combine applesauce, water, sugar, salt, oil, and whole wheat flour. Let sit 20 minutes. (I rarely let it sit.) Dissolve yeast in 1/2 cup warm water and add. Add white flour and knead 10 minutes. Cover and let rise. Punch down. Let rest 10 minutes. (I usually omit this rest also.) Shape into loaves. Put in 4 greased loaf tins. Let rise. Bake at 350 degrees for 40 to 45 minutes. Brush with water. This makes the crust soft instead of crunchy. Immediately remove from pans and let cool.

BREAD MACHINE VARIATION ADDED BY NaNiCa:

3/4 cup applesauce
2/3 cup water
2 tablespoons oil
1/2 tablespoon salt
1 1/2 cups white flour
1 1/2 cups whole wheat flour
1/2 tablespoon yeast
1/4 cup brown sugar

Put ingredients into bread pan in order listed. Don't allow yeast to come in contact with liquid. It's best if ingredients are at room temperature - the water can even be warm. This makes about a 2 pound loaf. Follow your bread machines instructions.

KANSAS DIRT CAKE

YAY...good ole Kansas dirt.

1 package of Oreos, crushed
1 8 oz block of cream cheese
1/2 cup butter
1 cup powdered sugar
1 tub of Cool Whip
2 boxes instant vanilla pudding
3 cups milk
1 teaspoon vanilla

Put 1/2 of crushed Oreos in a 9 x 13 pan. Mix cream cheese and butter. Add powdered sugar to this. Mix well. Fold in Cool Whip. In a separate bowl mix pudding with milk and vanilla. Mix well. Add to cream cheese. Mix. Pour over Oreos in pan. Sprinkle remainder of Oreos on top. Refrigerate. Serves 12-16.

EZ BROWN BREAD ICE CREAM

This makes it easier for those of us who don't live in Kansas to enjoy that yummy, regional Brown Bread Ice Cream. It might make it easier (and cheaper) for folks in Kansas to enjoy it, too.

1/2 gallon vanilla ice cream
1/2 cup pancake syrup
1 cup Grapenuts cereal

Soften ice cream in microwave and put in a large bowl. Drizzle with pancake syrup and sprinkle with cereal. Using a wavy, S-shaped potato masher combine everything. Repack and refreeze. The Grapenuts are less crunchy if you let this freeze twenty-four hours or so.

I have also made this using no-sugar-added ice cream and sugar-free pancake syrup.

CHOCOLATE CHIP PUMPKIN BREAD

Everyone in my neighborhood loves this pumpkin bread!! Tiny loaves were auctioned off last week (as a church fundraiser) and each loaf sold for $4+. So anyways...try it if you dare. It is so yummy and great for the holidays. Thanks JG!!

4 eggs
*1 cup vegetable oil
2/3 cup water
½ teaspoon baking powder
1 (15 oz.) can pumpkin
2 teaspoons baking soda
1 tsp each cloves, cinnamon, nutmeg
1 ½ teaspoon salt
3 ½ cups flour
About 1 cup chocolate chips plus some for topping.

Mix all ingredients together. Pour into loaf pans, top with lots of chocolate chips, and bake at 350 for about 1 hour. Makes three loaves.

*You can substitute 1 cup applesauce for all of the oil (but who would want too?????????) =)

MINESTRONE SOUP

This recipe comes from an Italian restaurant called Ristorante della Fontana that was popular in Salt Lake City. In fact, my mother had a luncheon for me there when I got engaged. Unfortunately it closed years ago. Prepare this recipe in a large kettle because it's restaurant-size. It makes tons, like 2 1/4 gallons. I sometimes freeze it. Joanne Stokes gave me this recipe.

1/2 cup olive oil (Pompeian)
2 medium onions, chopped
4 carrots, diced
4 stalks celery, diced
2 tablespoons chicken bouillon crystals
2 tablespoons chicken base
2 tablespoons beef base
1/2 teaspoon white pepper
1 teaspoon oregano powder
2 teaspoons salt
1/2 teaspoon garlic powder
1 cup barley, raw (Quaker)
1 can green beans
1 can diced carrots
1 can peas
1 large can garbanzo beans (S&W)
1 28-ounce can whole tomatoes
1 large can kidney beans
1 10-ounce package frozen spinach
1 6-ounce can tomato paste
2 cups cooked elbow macaroni (1 1/2 cups raw)

1. Pour in oil, onions, carrots, celery.
2. Doctor up with 5-11.
3. Add barley. Cook together 4-5 minutes till vegetables are tender.
4. Add canned goods including juices.
5. Add 1 gallon water.
6. Add tomato paste. ( I like to do this before I add the water.)
7. Add spinach still frozen.
8. Add cooked macaroni. (I usually add it uncooked.)

Simmer 2-3 hours. (I sometimes serve it as soon as the spinach is cooked.) Serve with Parmesan cheese.

Mom

Gluten-free if omitting pasta and barley. Substitute rice instead.

HOMEMADE OREOS

Oreos are one of my favorite cookies. If you know me it's not surprising that I have a recipe for them!! Warning: These puppies can be very addicting. Be careful!! By the way...you don't have to put frosting in the middle...the chocolate cookies are great by themselves too.

1/2 cup cocoa
2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup plus 2 tablespoons butter
5 oz unsweetened chocolate
5 eggs
2 1/2 cups sugar
2 1/2 teaspoons vanilla

Chocolate cookies:
Melt butter and unsweetened chocolate together. Mix w/ dry ingredients. Add eggs, sugar, and vanilla. Blend well. Chill dough. Scoop into 1 inch balls. Bake at 350 for 10-12 minutes or until edges are firm. Do not overcook.

Frosting:
1/4 cup butter, softened
4 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla
1/8 teaspoon salt

Makes 60 single cookies/30 Oreos.

MINT BROWNIES

4 tablespoons butter
1 cup semi-sweet chocolate chips
--Melt butter and chocolate chips together and stir until smooth. Pour onto brownies and put into freezer until glaze is hardened. Cut and serve. Store in refrigerator.

Bakers note: My MIL swears by Imperial. She uses it in all of her baking instead of butter. I am a butter girl...but I have started using Imperial in all of my BAKING except Blondies. Just FYI. =)

CHINESE CHICKEN SALAD

This is one of my favorite salads. You can't go wrong with Ramen noodles!!

HOT TURKEY AND CHEESE SANDWICH

I make this recipe at least once a week. It's easy because I usually have the ingredients in stock. Try it...see what you think. If you don't want to make the dough just buy Rhodes frozen bread dough and following the defrosting instructions.

Roll out dough into a large rectangle. Place turkey, honey mustard, and grated cheese lengthwise down the middle. Cut edges and braid over top. Top with melted butter and garlic powder, if desired. Bake at 350 degrees for about 30 minutes.

Variations: Use any lunch meat, different cheeses, and any condiments. Mix it up. =)

HOMEMADE CHEESECAKE ICE CREAM

BEST BREAKFAST BAKE EVER

I like to serve this for Christmas breakfast.

12 ounces sausage (I like to use links cut in fourths after cooking. Then Certain Parties can pick them out since she doesn't like them.)
1/4 pound fresh mushrooms
1 medium onion, chopped (I use less)
8 eggs
6 tablespoons sour cream
1/2 cup salsa
4 ounces Velveeta cheese, shredded (I sometimes omit this since this dish is so cheese-y.)
8 ounces cheddar cheese, shredded
8 ounces mozzarella cheese, shredded

Saute sausage, mushrooms, and onion. Blend eggs and sour cream and place in a greased 9 by 13 pan. Bake at 375 degrees for 8-10 minutes. Remove from oven, and add meat, salsa, and cheese. Bake at 300 degrees for 30 minutes.

2 eggs
2 teaspoons vanilla

--Mix then add:
2 1/2 cups flour

GRANDMA CHAR'S ADDICTIVE PRETZELS

I had to post Grandma Char's awesome recipe for Ranch Pretzels. They are seriously addicting and sooooooooo delicious.

2 15 oz bags tiny pretzels
1 12 oz bottle Orville Redenbacher’s popcorn oil
1 package dry ranch salad dressing mix
2 teaspoons lemon pepper

Mix all ingredients together in a LARGE bowl. Stir every 20 minutes for 2 hours. HINT: Take pretzels out of the bag by hand. Do not pour the entire bag into the bowl. This eliminates all the extra salt at the bottom of the pretzel bag.

CHICKEN ENCHILADAS

This is the best recipe from Grandma K!! No frills, simple and yummy - just the way I like em!!

2 8 oz pkgs of softened cream cheese
1 bunch chopped green onions
1 13 oz can of cooked chicken
8 large tortillas (wheat are great!!)

Mix together. Fill each flour tortilla with about 1/4 cup of the cream cheese mixture and roll up.

1 cup sour cream

Whisk together and pour over top of enchiladas in 9 X 13 pan.

Top off with about a cup of grated Monterrey or pepper Jack cheese. Slice some black olives on top and bake at 350 for about 25-30 minutes or until bubbly.

Then evenly pour melted butter on top. Bake at 350 degrees for 30 minutes. Serve over noodles. Try adding mushrooms or green peppers. Mix it up!!

SALAD DE LA MAISON

Hello, everyone. For my first We Recipe contribution I thought I'd post the recipe for Salad de la Maison since some people call me the Salad de la Maison Liason.

1/3 cup Parmesan cheese, grated
2/3 cup slivered almonds, toasted (I never toast them!)

SWEET CITRUS CHICKEN

My friend (JW) and I made this yummy chicken dish for dinner tonight. Don't be fooled by appearances...it's not your typical stuffing chicken recipe. The OJ makes it so sweet and tangy!! Try it. =) We served it with rolls and steamies (steamed veggies.)

1 2/3 cups hot water
1 pkg (6 oz.) chicken stuffing mix
6 small boneless skinless chicken breast halves (1 1/2 lbs)
2/3 cup orange juice
1/3 cup firmly packed brown sugar
3 tablespoon butter, melted

Preheat oven to 400°F. Add hot water to stuffing mix; stir just until moistened. Set aside. Place chicken in 13x9-inch baking dish. Mix juice, sugar and butter until well blended; pour over chicken. Top with prepared stuffing.

Bake 30 minutes or until chicken is cooked through.

SPINACH SALAD

This is a great salad. It is a great combo of sweet and sour. I make it at least once a week!!

Mix with:
1 lb spinach, torn into bite sized pieces
1 cup dried cranberries

Dressing:
1 tablespoon poppy seeds

SOFT BREADSTICKS

This recipe is great for soft breadsticks.

1 tablespoon yeast
1 ½ cup warm water
2 tablespoons sugar
1 teaspoon garlic powder
½ teaspoon italian seasoning
3 cups flour (I use half white, half whole wheat)

Combine the yeast, water, and sugar. Then add the rest of ingredients and knead for 3 minutes. Let rise for 10 minutes.

For breadsticks:
Roll out dough. Cut and shape into breadsticks. Place on cookie sheet and brush with butter. Sprinkle with Parmesan cheese, garlic salt, parlsey, etc. Let rise for 10 minutes. Bake at 350 degrees for 20 minutes.

ICE CREAM SANDWICH CAKE

Line a 9 X 13 pan with ice cream sandwiches. Cut them to fit perfectly. Then spread caramel ice cream topping on top. Then crush up favorite candy bar (S loves HEATH) and sprinkle over caramel. Finally spread Cool Whip on top. Freeze and enjoy!! It's really the easiest ice cream cake you'll ever make. Don't drool on your computer keyboard.

FAMOUS BLONDIES

The inaugural recipe!! You'll love these soft, moist, chewy, cooked to perfection "cookie cake" Blondies. Be careful not to eat the whole pan!! Great served with vanilla ice cream and Magic Shell (we call them Pan-ookies.)

1 cup flour
1 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon baking soda
1 egg
1/3 cup melted butter (about 5 1/2 tablespoons)
1 teaspoon vanilla
1 tablespoon hot water

Combine ingredients in order listed. Put in greased 9 X 9 square or circle pan. Press in 1/2 cup chocolate chips (I like semi-sweet...they compliment the sweet batter.) Bake at 350 for 25 minutes. Serve and enjoy.

Over the years I've had many people ask for my recipes, especially for the famous "BLONDIES." I thought it would be fun to have a place where recipes can be shared among family and friends (thus, my reasoning for starting this blog.) Let's all help each other out!!

Am I too adventagious and lame??
